Denmark’s restaurants, institutions and canteens used approximately 131.7 million euros worth of organic products in 2013, nearly double the amount form 2010. Leading growth categories include dairy (up 41 percent), dry goods (up 31 percent), beverages, and flour and grains. Fruits and vegetables accounted for 18 percent of the revenue. Organic sales are 5 percent of all food service sales in Denmark. Revenues by channel were: public institutions 33.1 percent; private sector workplace canteens 32.7 percent; restaurants, hotels, cafes 20 percent; public sector workplace canteens 7.8 percent, and others 6.4 percent.
