Farmers in Scotland have good prospects with organic products, the cabinet secretary for rural affairs, Richard Lochhead, said during a visit to an organic farm in Elgin. In the first quarter of 2013, he added, the organic market in Scotland grew by 3.2 percent per year, reaching £12.4 million. The rest of the United Kingdom had a 0.5 percent decline in that time. Demand for organic beef, lamb, milk, oats, potatoes, carrots and other vegetables is outstripping supply, he said.
